This recipe is lighter and easier than original eggplant parmesan you probably know. For traditional recipe you have to dip eggplants in egg, flour and breadcrumbs, and then you have to fry them. In the recipe I share today the eggplants are just baked in the oven until they get soft. This will not just make the meal lighter but also quicker to prepare.
