Caesar Salad With Almonds

Caesar salad is reach and tasty side dish, which can also be an excellent light dinner on its own. It’s also easy and quick to prepare.
The recipe by proposes even richer version of classic Caesar salad by adding sliced almonds.

For this recipe you need

For croutons
4 cups cubed Italian bread
2 tablespoons olive oil
2 tablespoons sliced almonds
2 tablespoons grated parmesan
zest of 1/2 lemon

For dressing
1/4 cup each olive oil
1/4 cup sliced almonds
1/4 cup grated parmesan
3 anchovies
juice of 1 lemon
2 teaspoons dijon mustard
1 garlic clove

salt and pepper


Mix cubed bread with olive oil, sliced almonds and grated parmesan, the zest of 1/2 lemon, and salt and pepper. Spread on a baking sheet and bake at 425 degrees F, about 8 minutes.
In a food processor puree sliced almonds, grated parmesan, juice, anchovies dijon mustard, olive oil, garlic clove and season with salt and pepper.
Toss the lettuce with dressing and the croutons.
