Pasta is an excellent ingredient also for salads. You cook the pasta, leave it to cool down and then add to it any fresh vegetables and spices you like. It’s one of my favorite plates in summer. It’s easy and quick to prepare and can be served as a side dish or a light supper on a hot summer evening.
Best of all, you can keep it in fridge for a couple of days and bring it for lunch at work.
