Cool Looking Eggplant Salad

Delicious and impressive salad recipe: instead of serving the salad in the regular bowl, you can make original bowls from parmesan cheese. The mixture of fried eggplants, cherry tomatoes and greens served in cheese baskets, won’t make this salad just extremely delicious, but it will also look great on your table.

Although not complicated to do, preparation of this salad will take you some time, as you need to cook the eggplants and bake the cheese cups separately. Nevertheless, this recipe is worth to try in some special occasion.

Here are the ingredients you need

1/2 cup extra-virgin olive oil, plus more for brushing

One 1 1/4-pound eggplant, cut into 1 1/2-inch cubes

Salt and freshly ground pepper

1 cup freshly grated Parmesan cheese

1 tablespoon balsamic vinegar

2 ounces mesclun greens (4 cups)

3 scallions, thinly sliced crosswise

1 cup red and yellow cherry tomatoes, halved
