Crispy Leftover Meatballs

When you have some leftover meat from yesterday’s dinner, use it to make tasty and crispy meatballs. For this recipe you can use any meat, or even make it completely vegan replacing the meat with chickpeas or zucchini. I’m sharing turkey meatballs recipe by Ella from Home Cooking Adventure. I like Ella’s recipe because is simple and relatively quick to prepare. It’s also healthier since the meatballs are baked and not fried in oil.

For about 40 small meatballs you need

2 1/2 cups (250g) cooked turkey, ground

2 medium carrots, peeled

2 potatoes, (about 300g), peeled

3 eggs

2 or 3 cloves garlic

2 tbsp olive oil

2 or 3 tbsp fresh parsley, chopped

1/2 cup breadcrumbs

salt and freshly ground black pepper

1 tbsp olive oil to drizzle on top
