Full Taste Spanish Style Salad

Take advantage of last summer days to make this delicious and tasteful Spanish style salad. It’s so rich and flavorful, you can serve it as a standalone light dinner or a side dish to any main meal.

Combination of peas, beans, courgettes and peppers makes this salad healthy and full of vitamins and proteins. Addition of chorizo gives it a touch of Spanish flavor.

These are the ingredients for tasteful Spanish Style Salad

  • 1 tbsp extra-virgin olive oil, plus extra for brushing

  • 100g cooking chorizo, skinned and diced

  • 1 tsp sherry vinegar

  • 1 red pepper, halved and deseeded

  • 100g fresh peas

  • 100g broad beans

  • 2 courgettes, sliced on the diagonal

  • 400g can butter beans, rinsed and drained

  • juice ½ lemon
