When it’s really hot outside you’ll want to make gazpacho, the traditional Spanish cold soup. It’s very easy and quick to make and you can keep it in fridge for couple of days. In fact, it’s better to make it in advance and put it in refrigerator to chill down well. If you don’t want to wait, you can serve it with a cube of ice. But sincerely, I recommend you preparing it in advance and serve it properly chilled.
