High Protein Mushroom Risotto

Yesterday I shared an excellent recipe for a creamy shrimp risotto. Let’s go with a vegan dish today. So the chosen recipe for today is a mushroom risotto. This risotto will be perfect as a main or a side dish. Although it contains no meat or dairy, it is incredibly creamy and full of proteins.
