Everybody knows that Jambalaya is savory dish originating from New Orleans. But not all people know that this dish was an attempt of the Spanish to make paella in the New World. They had to adapt the dish to available ingredients, so the saffron, which is typical for paella, and it was difficult to get at that time, was replaced with tomatoes. Later on the spices from Caribbean changed this New World paella into a dish known as Jambalaya.
Although they may be different variations of Jambalaya recipes, this dish still remains very savory and fairly simple and quick to make.
