Light Mediterranean Dinner

Another delicious 20 minutes dinner idea: shrimps in tomato sauce with olives and couscous. This recipe is really simple and quick to prepare. And it makes an excellent Mediterranean style light summer dinner.

While cooking the couscous according to instructions on the package, you will prepare tomato sauce with shrimps. In large saucepan heat the olive oil and sauté chopped onions for about 4 minutes. Add diced tomatoes, vine and olives, salt and pepper to taste and cook on low heat for about 5 minutes. Finally add shrimps and cook until they are cooked through, no more than 5 minutes. Serve with couscous. If you don’t like couscous, you can replace it with rice or pasta.

1 10-ounce box couscous (1 1/3 cups)

1 tablespoon olive oil

1 small onion, chopped

1 28-ounce can diced tomatoes, drained

3/4 cup pitted green olives

1/2 cup dry white wine (such as Sauvignon Blanc)

kosher salt and pepper 1 pound

medium shrimp, peeled and deveined
