For 4 servings of Caprese corn salad you need
1 (8 ounce) container small fresh mozzarella balls (ciliegine), drained
1/2 cup sweet corn kernels (about 1 medium ear)
1/2 cup sliced green or black olives
12 cherry or grape tomatoes, halved
1/4 cup minced red onion
1/4 cup basil chiffonade
1/4 cup white/golden balsamic vinegar
Just cut and mix all the ingredients in a bowl and drizzle with the vinegar. Add salt and pepper to taste.
