Today I share a really simple recipe for a tuna stuffed peppers I found over at I love Italian food website. The recipe is proposed by Jovina Coughlin, an American from Italian family. So you can rest assured the recipe is originally Italian.
This recipe can be served as appetizer or a side dish and is excellent for the picnic. It’s very simple and fast to prepare. It requires no cooking and it won’t take you more than 10 minutes to prepare. But keep in mind that it needs to marinate for at least 8 hours. So plan your preparation time accordingly.
Here are the ingredients you will need
Can Italian tuna in olive oil, 6 Oz
Anchovies in olive oil, 8
Extra-virgin olive oil, divided, 7 Oz
Cup plain dried bread crumbs, 1,7 Oz
Capers, minced, 2 Tablespoons
Finely chopped parsley, 2 Tablespoons
Freshly ground black pepper, to taste
Jar red, hot cherry peppers, drained, rinsed, seeded and stemmed, 32 Oz
