Pasta Salad is one of my favorite summer salads. It’s great when served as a side, but very often we have it as a main dish for dinner. I love to add a lot of fresh veggies for lighter version, or some shredded tuna or chicken, when I want to make it more filling.
In this recipe Pasta Salad is made with Orzo, also called risoni, which is a form of short-cut pasta, shaped like a large grain of rice. Often it is used as a soup accompaniment, but in this recipe it will do great as one of the ingredients of this delicious summer salad. If you don’t have orzo on hand, you can use any other type of small pasta or even replace it completely with rice or quinoa.
